So I just made the most bomb meal and I had to put it in my blog and share it immediately because it was so. Freaking. Delicious. As the title nicely states, I made chicken Alfredo spaghetti squash. I recently found a few recipes on Pinterest that use spaghetti squash and I've been meaning to try them all. The last one I made was delicious as well. The recipe for it is here. Anyways, I can't have Alfredo because most store-bought jars have eggs in them and eggs kill me. I've made Alfredo before using cauliflower, but it was a huge mess and hassle and I don't think I've had it since then because I was so over the process. I found a recipe today that used Greek yogurt in the Alfredo sauce and I was like, "hey, that sounds pretty good." I also happened to buy a spaghetti squash and some chicken today. How convenient. So I ended up throwing a few recipes together and am now a chef and will be starting my own restaurant soon.

The Alfredo recipe used was created by the real MVP, Tiffany at Creme de la Crumb.
- 1 medium-sized spaghetti squash
- 1-2 medium chicken breasts, diced
- 2 tablespoons butter
- 1 1/2 teaspoons garlic powder
- 1/2 C milk (I used lactose-free)
- 3/4 C plain Greek yogurt (I used 0% fat)
- 3/4 C parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 400 degrees. Cut squash in half. Remove seeds with spoon and toss those suckers in the garbage. Place squash halves face-up on baking sheet and season with olive oil, salt, and pepper (I used canola oil because I'm trash). Cook the squash for 45 minutes. When done, set aside.
- When the squash is done, dice up chicken breasts, season with pepper, and cook on medium heat until done.
- In a medium saucepan, melt butter over medium heat. Stir in garlic powder and milk. Remove from the heat and whisk in Greek yogurt.
- Add parmesan cheese to the sauce. If it doesn't melt, the sauce isn't hot enough. Put back on low heat for about 5 minutes or until cheese is melted.
- Back to the squash- pull squash strands out of squash and into a large bowl. Add in chicken and Alfredo sauce. Mix everything together so that it creates a giant mess similar to my life at the moment.
- Place empty squash shells (is that the correct term?) back on a baking sheet and fill with the chicken Alfredo squash mess. Sprinkle with parmesan cheese. Set the oven to broil on HI and place back in oven for about 2-3 minutes or until cheese is melted.
- Take out of the oven and inhale because it's so delicious.
